New chophouse in the City of Eustis exudes intimacy, richness

To find the “artistic side of steak” look no further than Jeffrey Paul’s Chophouse in Eustis, Fla.

Opening in May 2005, this steakhouse features fine dining in an intimate setting. Located off the city’s main thoroughfare, Bay Street, Jeffrey Paul’s Chophouse is a popular spot to nosh on some delectable appetizers, such as the stuffed mushrooms arnali or escargot metropolitan style, or to quell the small appetites with its traditional French onion soup or Caesar salad. But make no mistake; this charming chophouse is all about the steak, which is butcher-block, Black Angus Beef.

With more than 35 years of culinary experience, owner Jeffrey Paul says this private venture is his vision of a quality steakhouse. After sharpening his cooking skills at Orlando-area restaurants, such as La Scala Ristorante, Christini’s Ristorante, Del Frisco’s Steakhouse and Sam Harry’s, Jeffrey Paul’s Chophouse is a reflection of all the dishes he enjoys and believes his guests will too.

While food critics and guests rave about the New York strip, ribeye, porterhouse or chops (veal or pork), Paul claims his signature menu feature is the four-course Chateaubriand, which satisfies two guests with fine cuts of steak, Australian lobster tails, an appetizer, salads and dessert.

The culinary adventure for guests doesn’t end with the main course. Jeffrey Paul’s Chophouse features scrumptious dessert options, such as the flaming bananas Foster, crème brulee or Belgian chocolate cheesecake. Accompanying the chophouse’s first-class cuisine is a comprehensive wine list with selections from California, New Zealand, Australia, Italy and France. The restaurant also offers a full bar.

Along with the impressive menu, Jeffrey Paul’s Chophouse features an eclectic ambiance that was described by one local food critic as “metropolitan.” Paul refers to his cabin-style restaurant as a "landmark" in Eustis, only minutes away from the City of Mount Dora.

While the outside of the establishment gives off that rustic feel, the interior is elegantly appointed with rich wood tones, romantic lighting and soft piano music. The chophouse also features a live guitarist on the weekends. However, the crowing moment for many diners is Paul’s special send-off as he offers ladies a rose after the meal.
